Made a nice healthy salmon stir fry tonight. Pretty basic bizniz but turned out niiiiiice.

Just made a random smoked mackerel, beetroot, boiled potatoes, gem lettuce, red onion, spring onion, red chilli, pine nut salad with a bit of olive oil on top. Just stuff I had in the fridge I thought would go we’ll together. And it did. Nice.

It’s going to be my Dad’s Birthday on Tuesday so I invited him and Mum over last night for dinner - started with potato soup - have made it a few times and really got it nailed now - pretty easy too - but really healthy & tasty. Basically you get 2 leeks, one carrot, one onion, chop them up and sweat them in a pan with a bit of butter, put the lid on and leave on a lowish heat for about 15 minutes. While that’s going you peel a load of potatoes and chop them up into little cubes and make about 1L of vegetable stock. Then pour that in with the potatoes and simmer away for at least 15 minutes. When you’re ready just whizzz it up with a hand blender and serve with some cream, and bacon on the top.
Then I did duck, with a plum sauce - score the duck and season then pan fry skin down for about 8 minutes - just until the skin is crispy but not burned. Brown off the other side for 30 secs then put them in a preheated oven at 200 degrees C for about 10 mins - let it rest for a while then slice it up with a nice sharp knife. And watch out for the juices all ooozing out onto your floor… For the plum sauce fry a shallot for about 5 minutes in a pan, add plums, lots of suger, red wine and beef stock - then let it simmer for at least 15 mins really…
Parents were impressed and now want to come over more often hah!

Just made this from a Gordon Ramsay recipe but used mushrooms instead of ginger. Will use less coriander in the dressing next time though. 200g each of beef and pork mince was a good move too. Ate alone with penicillin starter as I’ve got Tonsilitis…

Made an epic 3 Bird roast dinner last night for a ladyfriend & me - Mega John B roast potatoes & parsnips, roasted the carrots with olive oil & coriander, red cabbage, mini sausages wrapped in bacon, bread sauce and PROPER gravy. Tasted awesome but my kitchen looks like a bomb hit it!

So tonight I made I Chicken Parmesan Bake type of dish, I had defrosted some nice chicken breasts, had some cherry tomatoes that needed using so just winged it…
Preheated the oven at 180 C (fan). And started running a bath as I’d just got in from a 4 mile run…
Got a big ceramic rectangular dish, put the chicken breasts in & seasoned. Then got a bowl, sliced all the tomatoes in half and mixed in a tin of tomato purée, 3 chopped garlic cloves, a load of basil, olive oil, seasoned and mixed together. Poured over the chicken.
Reused the bowl to save on bachelor washing-up, put a load of grated mozzarella, some Parmesan, 1/3 pack of soft cheese, and some squirty cream (didn’t want to use my nice cream as I’m saving it for something tomorrow) and mixed it all up. Poured that all over the top. Covered in foil and whacked in the over for about 35 mins. Took the foil off for the last 10 mins. Served with some pasta that also needed using up. Mixed in olive oil and pesto with the pasta. Had a bath. Got out of the bath and ate it and oooooooh it was yum.
Now I’m going to go play Black Ops 2 for a bit before my ladyfriend arrives.

Tonight I made duck with green beans, potatoes & red onion. First pan fry the duck, skin down for about 7 minutes, after scoring the skin & seasoning. Then brown the other side for 30 secs, them whack in the oven for about 15 minutes. I roasted the potatoes & onion for 35 mins, and steamed the beans for about 5 mins then melted in some butter and mint. Lovely.

Had a few random things in the fridge to use up so tonight I made a nice seafood salad…
Started by heating up some garlic and chilli in oil with lemon juice, then added spring onions & some mixed seafood - seasoned etc. Then poured it over some green salad and spinkled dill over. Shazammm.
